Lindsay's Peanut Brittle 4.15 Scene in a Mall



“Hey, how often does this happen?” “Oh, well, it's a hot lunch every day. Plus they always bring something for the group. Yesterday it was peanut brittle Lindsay made. It broke a crown, three teeth, then a HazMat team came and took it away.”


Ingredients: 

  • 1 cup sugar

  • ½ cup corn syrup

  • ¼ cup water

  • 1 cup shelled and peeled peanuts

  • 1 tbsp peanut butter

  • 1 tsp baking soda

  • 1 tbsp melted butter

  • ½ tbsp honey

  • ½ tsp vanilla

  • ¼ tsp salt

Directions: 

  1. Line a cookie sheet with parchment paper or a silicone baking mat and set aside. Spray an offset spatula or rubber spatula with nonstick cooking spray and also set aside. 

  2. Add the sugar, corn syrup, and water to a medium saucepan and place over medium heat. Whisk the mixture periodically until it boils and reaches the hard-ball stage (250 degrees F). 

  3. Once the mixture reaches 250 degrees, you will want to move quickly through the next steps. 

  4. Add in the peanuts and peanut butter, stirring constantly until the mixture reaches 285 degrees F. 

  5. Remove from heat and stir in the baking soda, butter, honey, vanilla, and salt. Do not stop stirring or it will begin to harden.

  6. Carefully pour the mixture across the prepared cookie sheet and use the prepared spatula to quickly evenly spread the mixture into a thin layer. Be careful, but move quickly because it hardens fast. 

  7. Allow to cool and set for at least an hour then break into smaller pieces to enjoy. 


Poor Lindsay! She was really trying to show Dean how much she loved him through food. I think with a bit more practice, she would have been a great cook because she had the heart for it. Don’t worry, I helped her out with this one and there weren’t any broken teeth!
