Berta's Crab Puffs 8.03 Summer

“Emily, these puffs, are they crab?” “Do they taste like crab?” “I don't know.” “Neither do I.” “Berta makes things, and I just eat them.” “She doesn't tell you what they are?” “Oh, no, she tells me.”


  • ¼ cup white onion, diced

  • 2 cloves garlic, chopped

  • 1 tsp lemon zest

  • 1 tbsp lemon juice

  • ½ cup cream cheese

  • ½ tbsp capers

  • 1 tsp worcestershire sauce

  • ½ tsp salt

  • ½ tsp pepper

  • 1 tsp paprika, plus more for serving

  • ¼ tsp cayenne powder

  • 8 oz crab meat

  • 2 sheets puff pastry

  • 1 egg, beaten


  1. Preheat the oven to 375 degrees F. 

  2. Add all ingredients except the puff pastry and egg to a food processor and blend until smooth. 

  3. Cut the puff pastry sheets into 12 even squares each for a total of 24. 

  4. Scoop about 1 tbsp of the crab mixture into the center of each square. 

  5. To create the pinwheel shape, cut a ½ inch slit from each corner of the square towards the center. Fold every other corner to the center of the square and use your finger to press the dough together. 

  6. Brush the dough with the egg wash and sprinkle with the extra paprika. 

  7. Bake at 375 F on a baking sheet for 15-17 minutes or until golden brown. 

One of my favorite parts of AYITL is Emily embracing Berta and her family. In summer, Berta makes mystery puffs and while Emily doesn’t know for sure, she thinks they’re crab puffs. I decided to make crab puffs but with a little Berta flair and made them into these fun pinwheel shapes. With these crab puffs, I have completed the seafood puff trifecta: lobster puffs from 1.02 The Lorelai’s First Day at Chilton, salmon puffs from 6.05 We’ve Got Magic to Do, and crab puffs from AYITL Summer.
