Chicken Curry 7.17 Gilmore Girls Only


“Well, let's not get into semantics. It would just be a bummer if you bailed. ‘Cause she's been cooking for like two days.” “Okay, yeah, tomorrow night, that sounds fine.” “Great! And I hope you like curry, 'cause Lane's gone curry crazy.” “I'm not big on curry.” “Oh, well, maybe you can pick around it.”


Ingredients:

  • 2 tbsp olive oil

  • 1 bay leaf

  • 1 star anise

  • 4 cloves

  • ¼ tsp cardamom seeds

  • 1 cup white onion, diced

  • 3 cloves of garlic, minced

  • 1 tbsp ginger root minced

  • 1-2 chili peppers (of your choice depending on your spice preference), chopped finely with seeds and stem removed

  • 1 large tomato diced

  • 1 tsp turmeric*

  • 1 tsp chili powder*

  • 1 tsp paprika*

  • 1 tsp garam masala*

  • 1 tsp coriander powder*

  • 1 tsp salt*

  • ½ tsp pepper*

  • 3 tbsp plain yogurt

  • ½ cup water

  • 1 lb boneless, skinless chicken breast cut in 1 inch chunks

  • 1 tbsp cilantro, finely chopped

*Plus more for seasoning chicken


Directions:

  1. In a large pan, heat the olive oil over medium heat. Add the bay leaf, star anise, cloves, and cardamom seeds. Allow to simmer for about 3 minutes then remove the bay leaf, anise, and cloves.

  2. Add the onion, garlic, ginger, and chilis to the fragrant oil and allow to simmer.

  3. Add the tomato, turmeric, chili powder, paprika, garam masala, coriander, salt, and pepper and allow to cook for an additional 5-7 minutes or until the tomatoes have cooked down.

  4. Stir in the yogurt until fully combined then add in the water a little at a time. You don’t want the curry to be too thin, so you may not need the full amount.

  5. Season the chicken with the above spices then add to the curry. Cook for about 6 minutes or until the chicken is fully cooked.

  6. Serve with cilantro as a garnish.


I served my curry over rice, so if Luke really wanted, I guess he could pick around the curry. But I don’t know why he wouldn’t like this because it’s delicious. Although, I really want to know what Lane was doing cooking curry for two days. But I bet hers was very flavorful. I can’t believe we’re almost to the end of this journey! I will be announcing what’s next in the world of Eating Gilmore next month!
