Fran's Carrot Cake Cookies 3.20 Say Goodnight, Gracie

“Yeah. She was so sweet. And oh my God, she loved you. I didn't think she was gonna let me leave the bakery with you. She just kept giving you cookies in a shameless attempt to buy your affections away from me. And let me tell you, for a couple weeks, it worked. For two weeks, you just kept staring at me like, ‘You're the lady who took me away from the cookies. I'm gonna kill you.’”


Ingredients:

  • 1 cup butter, softened

  • 1 cup brown sugar

  • ½ cup white sugar

  • 2 eggs

  • 2 tsp vanilla

  • 1 cup finely shredded carrot

  • 2 ½ cups flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground ginger

  • ½ tsp ground nutmeg

  • ¼ tsp ground cloves

  • ½ cup pecans, chopped

For the topping

  • ½ cup butter, softened

  • 8 oz cream cheese, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla

  • ½ tbsp ground allspice

  • Sliced pecans

Directions:

  1. Preheat the oven to 350 degrees F.

  2. In a large bowl, cream together butter and both sugars until light and fluffy.

  3. Mix in eggs and vanilla until smooth.

  4. Add the shredded carrot and mix until fully combined.

  5. Sift in the dry ingredients: flour, baking soda, salt, cinnamon, nutmeg, and cloves. Mix until fully combined.

  6. Fold in the chopped pecans.

  7. Scoop out cookies with a double cookie scoop and roll into a smooth ball. Place on a lined baking sheet.

  8. Bake at 350 degrees for 12-15 minutes or until golden brown. Allow cookies to fully cool before adding the frosting.

  9. While the cookies are cooling, prepare the cream cheese frosting by creaming together the butter and cream cheese in a medium bowl.

  10. Mix in the powdered sugar and vanilla until smooth.

  11. Spread cream cheese frosting on top of the cooled cookies.

  12. Sprinkle ground allspice on top of the cookie and add a sliced pecan.


Lorelai doesn’t say what type of cookies Fran gave Rory when they first moved to Stars Hollow, so I got to make what I wanted. Lorelai has ordered carrot cake from Weston’s Bakery in past episodes, so I thought it would be fun to make carrot cake cookies! Sorry, no episode musings today! It’s been a busy few weeks for me.
