“Hello, Porky! Hello! Oh! Well, I’m feeling a little guilty because of the You-L-T I had yesterday. That’s right. I’m sorry. Please forgive me.”
Ingredients:
4 strips of bacon
2 slices sourdough bread
3 tbsp mayonnaise
2 tbsp pesto
1 ripe avocado, peeled, pitted, and thinly sliced
2 thin beefsteak tomato slices
2 leaves of butter lettuce
1 tbsp raspberry chipotle jam
2 oz gruyere cheese, thinly sliced
Salt, pepper, paprika, and oregano to taste
Directions:
Preheat oven to 400 degrees F and line a baking tray with parchment paper.
Place bacon on baking tray and season with salt, pepper, and paprika. Bake at 400 F for 15-20 minutes or until bacon is cooked and crispy.
While the bacon is cooking, grill or toast the sourdough bread to your liking.
Meanwhile, prepare the pesto mayo by combining the mayonnaise and pesto in a small bowl and season with salt and pepper.
Build your sandwich by spreading the pesto mayo on both slices of bread. Spread the jam on top of the pesto mayo on one slice. Then layer the lettuce, tomato, avocado, cheese, and bacon. Season with salt, pepper, and oregano before placing the other slice of bread on top.
Whew! This episode was a little tricky to find something to make. They don’t really mention food, and I wasn’t sure about making a BLT because Lorelai feels bad about eating one when she pets the pig at the pet fair. But to me, a BLT is such a good sandwich, and I couldn’t turn down a chance to make one. A creamy pesto mayo takes this sandwich to the next level in my book.
I haven’t really talked about my opinions of the episodes like I used to when I first started this blog. Mostly because it was taking so much time, but I also felt like I didn’t have anything new to contribute to the Gilmore Girls discourse. Both points still hold true, but now that we are into Season 6, arguably one of the most polarizing seasons, I wonder if I should share some of my thoughts. I definitely will when we get to April (spoiler alert, I’m an April apologist). People always ask me what I’m going to do when I finish this project, and maybe that will include going back and giving my thoughts on each episode? Only time will tell!
